Crab Cake Recipe

Crab Cake Recipe
  • 1 pound Dungeness crab meat
  • 1/2 pound unshelled shrimp
  • 1/2 cup cream or half and half
  • ground pepper to taste
  • 1/2 cup finely diced green onions
  • 1 egg
  • 1/4 cup finely crushed bread crumbs
  • 1 T. Dijon mustard
  • 1 t. Worchestireshire sauce
  • tiny pinch Cayenne pepper (don't overdo it!)
  • olive oil for frying

Crab Cake Recipe Directions

Shell the crab and shell and devein the shrimp. In a food processor add the shrimp egg, cream, mustard, Worchestershire sauce, cayenne pepper and ground black pepper. Blend. Pour the mixture into a mixing bowl. Add the crab meat, bread crumbs and green onions, and mix thoroughly with a wooden spoon. Shape the mixture into 10 cakes. Heat 3 tablespoons olive oil in a nonstick skillet and add the cakes, cooking over medium heat until golden brown - about 3 minutes on each side. Serve the crab cakes.

Pound Cake Recipe

Pound Cake Recipe
  • 3 cups granulated sugar
  • 1 cup solid vegetable shortening (such as Crisco)
  • 2 sticks (8 oz/1 cup/226g) butter or margarine (better with real butter)
  • 5 eggs
  • 3 1/2 cups all-purpose flour (sifted)
  • 1 cup whole milk
  • 2 tsp. vanilla extract or flavoring
  • 2 tsp. lemon extract or flavoring

Pound Cake Recipe Directions

Preheat oven to 350°F (180°C) and grease a large tube pan. Beat sugar, crisco and butter until fluffy. Add eggs to mixture. Mix in the flour, milk and flavorings. Pour batter in prepared pan and bake for 1 and a half hours. Let cake cool and serve the pound cake.

Carrot Cake Recipe with Maple Icing

Carrot Cake Recipe
Cake:
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups sugar
  • 1 1/4 cups canola oil
  • 4 large eggs
  • 3 cups grated peeled carrots
  • 1 1/4 cups coarsely chopped walnuts
  • 2 tablespoons minced peeled ginger

Icing:

  • 10 ounces cream cheese, room temperature
  • 5 tablespoons unsalted butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1/4 cup pure maple syrup

12 walnut halves (for garnish)

Carrot Cake Recipe Directions

Icing - Mix the cream cheese and butter in large bowl until fluffy. Add powdered sugar and maple syrup. Chill for 30 minutes. Spread the icing between two layers of the caked and arrange walnuts on top.

Cake - Preheat oven to 350 F and use a 9 x 3 inch cake pan line with waxed paper. Mix flour, baking soda, salt and cinnamon in medium bowl. In a seperate large bowl, whisk sugar, oil and eggs in one at a time. Pour in the flour mixture, carrots, walnuts and ginger. Pour the batter into pan. Bake cake for about 40 minutes or until tester comes out clean. Cool cake and serve carrot cake.

Chocolate Cake Recipe

Chocolate Cake Recipe
  • 1 (18.25 ounce) package devil's food cake mix
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 2 cups sour cream
  • 1 cup melted butter
  • 5 eggs
  • 1 teaspoon almond extract
  • 2 cups semisweet chocolate chips

Chocolate Cake Recipe Directions
Preheat oven to 350° F. Mix the cake and pudding mix together in a large bowl. Mix in the sour cream, melted butter, eggs and almond extract. Beat until blended. Pour in the chocolate chips. Pour batter into a cake tin or into a bundt pan depending on what type of cake you prefer. Bake for 55 minutes. Let cool completely and serve the chocolate cake.
