Spinach Stuffed Turkey Meat Loaf Recipe

Turkey Meat Loaf Recipe
  • 1 cup coarsely chopped wild mushrooms (chantrelle, morrel, shitake)
  • 1/4 cup chopped onion
  • 10-ounce package frozen chopped spinach, thawed and drained
  • 1/2 cup (2 ounces) shredded part-skim mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 pound 99% lean ground turkey breast
  • 3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
  • 1/2 cup fat-free milk
  • 1 egg white, lightly beaten
  • 1 teaspoon Italian seasoning blend
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon black pepper
  • Butter and Oil

Spinach Stuffed Turkey Meat Loaf Recipe Directions

Preheat oven to 375°F. Saute mushrooms and onions in oil and butter until soft. Put into a bowl and add spinach and all but 1/4 cup of the mozarella cheese. In a separate bowl mix turkey, oats, milk, egg white, Italian seasoning, salt and pepper. Place a layer 2/3 of the turkey meat loaf mixture across bottom of a 11 x 7-inch oven dish. Indent the midde of the turkey and layer with spinach mixture. Place the remaining meat mixture on top. Place in the oven for 35 minutes. Remove from oven, sprinkle with remaining mozzarella cheese. Return to oven for 5 minutes. Remove from oven and let sit for 5 minutes before slicing and serving the spinach stuffed turkey meat loaf.
