Easy Zucchini Recipes
This easy zucchini recipe is a great snack and makes 8 Crunchy Zucchini Sticks

  • 3 med. zucchini
  • 1/2 c. wheat germ
  • 1/2 c. finely chopped almonds
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 c. margarine or butter, melted

Easy zucchini recipe directions

Cut each zucchini lengthwise into fourths, then lengthwise into halves to form sticks. Cut each stick lengthwise into halves (each zucchini makes 16 sticks). Mix wheat germ, almonds, cheese and salt in plastic bag. Roll about 8 zucchini sticks at a time in margarine until evenly coated. Lift with fork. Shake sticks in wheat germ. Lay on an ungreased cookie sheet. Cook in 350 degree oven until crisp and tender, about 15 minutes. Serve and enjoy this easy zucchini recipe!

This Easy Zucchini Recipe makes 8 Potato Zucchini Pancakes

2 unpeeled russet potatoes
1 egg, lightly beaten
1 unpeeled med. zucchini, shredded
1/2 tsp. fresh grated nutmeg
2-3 tbsp. unsalted butter
2 tbsp. flour
1/2 tsp. salt
Freshly ground pepper
2-3 tbsp. oil

Easy zucchini recipe directions

Shred potatoes. Immediately submerge in bowl of cold water. When ready to cook, drain well. Spread on cloth towel, roll towel jelly roll fashion and squeeze potatoes gently to remove moisture. Transfer to mixing bowl. Add zucchini, egg, flour, salt, nutmeg and pepper and toss with hand to mix ingredients. Heat 1 tablespoon each butter and oil in large skillet over medium- high heat. When pan is sizzling hot, spoon about 3 tablespoons potato mixture into skillet shaping carefully into compact 3 inch circle. Repeat until skillet is filled, making sure pancakes are not touching. Cook until golden on underside. Shape pan and turn pancakes over. Press lightly with spatula and let cook until brown and crisp. Enjoy and serve this easy zucchini recipe!

I enjoy easy zuchhini recipes like this batter fried zucchini sticks.

1 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg, lightly beaten
1 cup milk
2 tablespoons oil
1 pound zucchini, cut into 3 or 4 inch sticks
Flour (optional)
Oil for deep frying
HOLLANDAISE SAUCE
4 egg yolk
1 tablespoon water or dry white wine
1/2 cup butter, softened
1/4 teaspoon salt
Dash black pepper
1 teaspoon lemon juice

Easy zucchini recipe directions

Sift flour with baking powder and 1/2 teaspoon salt. Combine egg, milk, and 2 tablespoons oil. Slowly add to dry ingredients, beating until smooth. Pat zucchini sticks very dry and if desired dredge lightly in flour.

Dip pieces, one at a time, in batter. Fry in deep fryer heated to 375 degree until golden brown, 1-2 minutes. Drain on paper towels. Sprinkle with more salt, if desired.

To make sauce, beat egg yolks until thick and light colored. Mix in water and transfer to top of double boiler set over barely simmering water. Heat and stir 2-3 minutes until warm, not hot, and eggs have begun to thicken. Add butter, 2 tablespoons at a time, beating continuously until well blended. Cook, beating 2-3 minutes until sauce thickens enough to coat back of spoon. Remove from heat and stir in 1/4 teaspoon salt, pepper and lemon juice. Serve and enjoy this easy zucchini recipe!

For a great easy zucchini recipe make a batch of these zucchini fritters.

1 lb or more of zucchini Remove ends, peel skin (optional), remove seeds, grate
1 onion grated or chopped fine
2 cloves garlic minced
2 eggs (beaten)
1 cup of flour (could be more or less)
1 tablespoon cumin seeds
1 Tablespoon ground cumin
1 Tablespoon ground coriander
Red pepper to taste (about 1/2 teaspoon)
Salt to taste (! teaspoon)
Canola oil for frying

Easy zucchini recipe directions

Cover the grated zucchini and onion with salt. Let sit for 15 or more minutes and then squeeze juice from the vegetables and discard juice or save it for vegetable soup. Add the rest of the ingredients (except the oil) until you have a thick batter consistency.

Spoon batter into hot oil (size of a plum, and not too thick or the center will not cook) and fry until golden brown. Drain on paper towels so its not greasy. Serve and enjoy this easy zucchini recipe!
