Zucchini Bread Recipe

Zucchini Bread Recipe
  • 3 eggs
  • 1 cup olive oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups coarsely grated zucchini
  • 1 can (8oz) crushed pineapple
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1 cup chopped walnuts
  • 1 cup currants (or raisins)

Zucchini Bread Recipe Directions

This zucchini bread recipe comes from an old issue of Sunset Magazine. Preheat the oven to 350°F. Mix eggs, oil, sugar, and vanilla in a large bowl or mixer until until thick and foamy. Stir in the zucchini and pineapple.
Seperately, combine flour, baking soda, salt, baking powder, cinnamon, and nutmeg and mix thoroughly. Next add in the walnuts and currants.
Combine batter and place the into 5 by 9 inch loaf pans. Bake for 1 hour and let cool and serve the zucchini bread.

Here are some additional fresh Zucchini Bread Recipes

1 cup salad oil
2 cups granulated sugar (Use white sugar, not brown sugar)
2 cups fresh grated garden zucchini (Reserve some liquid)
3 fresh eggs
3 1/2 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
2 cups brown raisins
1 cup fresh chopped nuts

Zucchini Bread Recipe Directions
Mix oil and sugar together in a large mixing bowl. Add the grated zucchini, then the eggs.

In a separate bowl, sift the remaining ingredients together. Then add to zucchini mixture.

Mix together very well. If batter is too thick, adjust with a little reserved zucchini liquid.

Pour into greased and floured bread pans. Bake in a 350 degree oven for 1 hour and 15 minutes or until toothpick comes out clean. Cool on bread racks. Serve with your favorite soup or stew.

This is a delicious Zucchini Bread Recipe

1 1/4 cups whole wheat flour
1 1/4 cups flour
1 tsp Salt
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp Ginger
1/4 tsp Allspice
1/8 tsp Clove
4 Eggs
1 1/2 cups white sugar
1/2 cup dark brown sugar
1 cup Vegetable oil
2 1/2 cups Zucchini
1 cup Pecans
1 teaspoon Lemon rind (grated)

Zucchini Bread Recipe Directions

Sift together whole wheat flour, flour, salt, baking soda, baking powder, ginger, allspice, and clove. In separate bowl, mix eggs, sugar and oil. Add in dry ingredients and mix well. Grate zucchinis into this mix. Chop nuts and blend those in.

Grease two 9" loaf pans and divide the batter up between the two pans. Bake at 350F for one hour. Let cool and serve this Zucchini Bread Recipe!

This is a great holiday Zucchini Bread Recipe

3 eggs
3-1/2 teaspoons pure vanilla extract
3 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 cup canola oil
3 cups unbleached all-purpose flour
2 cups sugar
3 cups zucchini, grated
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder

Zucchini Bread Recipe Directions

Preheat oven to 350 degrees. Mix vanilla extract with eggs; beat and whisk until well blended. Add nutmeg, cinnamon, flour, oil, and zucchini to egg mixture and blend well in mixer. Add sugar, baking soda, salt, and baking powder; blend well. Place mixture in 2 prepared 9-inch loaf pans and bake 1 hour or until inserted toothpick comes out clean. Bake muffins for 15 to 20 minutes. Let cool and enjoy this zucchini bread recipe!!
